Guess what? I have sooo many videos just waiting to be edited and uploaded to this site. But you know what? I’ve been MAJORLY slacking. Partly because I launched my new spice line which you can view and purchase here! And partly because I’ve been crazy-busy at my hair salon (which is how I pay the bills) I’m sure you get it right? Don’t be mad; I still love you. I promise, I will be bringing you a lot more content very soon. In the meantime, make this pantry pasta. Because, who doesn’t love a great pasta dish that takes 15 minutes and just a pocket full of ingredients?

And, not to brag, but you’ll barely have to scroll to get to this recipe! It’s just a video and one picture with absolutely no back story. Don’t you love it?

There isn’t much you need to know about making this delicious and lightening fast dish except: USE GOOD QUALITY INGREDIENTS. Since it comes together with such few ingredients, quality is key.

I’ll start with the olive oil. Invest in two olive oils; one for everyday sautéing and cooking and one packed with flavor for salad dressings, appetizers, or for meals like this when you want the ‘olive oil taste’ very present and shining as a star ingredient. If you are anything like me? You’ll have THREE olive oils… the last one reserved for extra special recipes or dishes that you only bust out when the occasion calls for it. For this and most other Olive Oil concentrated dishes I reach for Monini GranFruttato, which is a perfectly balanced Italian olive oil that professional chefs love to use.

Next is your pasta… choose a good one that is preferably bronze cut. And as always, use fresh produce whenever possible. Garlic skin should be shiny and tight, the broccoli should not be whimpy, and for the love of all things food, use real parmigiana! This doesn’t go without saying that I do not frivolously spend money on all cooking all the time but I do use the better quality stuff when it’s necessary. I have the cheap container of ‘grated parmesan cheese’ that I use for dips, soups, and other things… and everyday cooking salt, etc., etc., but again, only a few ingredients are needed for this recipe so they should be the best quality. At the end of the day… you do what fits your ‘mode di operandi’.
